Before I get to the toddler meals today, I want to take a minute to share my gratitude for the option to be a vegan, and to raise my children that way. Living in a developed country and being well-educated, I am afforded the opportunity to be vegan. If my family lived in an under-developed country, it’s quite possible that we would be relying on milk from our own or a neighbor’s cow or goat, just to ensure that our children got enough calories to survive. If I were not fortunate enough to receive an excellent education, I may not understand the environmental, health, and animal rights issues that prompt me to be vegan (which in no way means that a person of any education level can’t understand and choose to be vegan, but my education has made the decision an easy one). I have the financial and infrastructure resources to provide my family with a well-balanced, varied vegan diet, that is both healthful and tasty. So today I say thank you for all the things, big and little, that mean I am able to raise my children to be vegan.
