Are you familiar with the blog Three and a Half Vegans? Kelly has taken over a vegan Food Network cook-along. The theme for August is sandwiches. Here’s my first effort at veganizing a Food Network sandwich recipe. It’s based on Ina Garten’s steak sandwich. I don’t want to get into any copyright issues, so I’m going to outline what I did differently. What’s great about veganizing this recipe is how much I was able to keep the same. Please reference the linked recipe, for the specifics.
Vegan Grilled “Steak” Sandwiches Based on Ina Garten’s Recipe
3 sandwich-sized seitan “steaks” in place of the meat
Vegenaise or your fave brand/recipe for vegan mayo
your favorite vegan sour cream
greens (we used kale, rather than arugula)
remaining ingredients list and quantities can be found here
The mustard mayo is exactly the same, but with vegan sour cream and mayo. As for the seitan, use your favorite brand or your favorite recipe. I almost always go with Sarah Kramer’s seitan recipes. This time I used her recipe for faux beef from La Dolce Vegan. I grilled the prepared seitan, rather than cooking it in a pan. As a result, I needed to use about 2 1/2 tablespoons of oil to cook the onions and thyme (since there was no fat in the pan from cooking meat). Also, you’ll notice that we used toasted sourdough bread, rather than focaccia, though I would have preferred the focaccia.
